Sushi Jones melds perceptions of Japanese dining and culture with a distinctive American voice. A hybrid fast casual concept combining the artful preparation of Japanese cuisine with the streamlined convenience of American take-out to introduce the cuisine to a wider audience. Traditional offerings along side Americanized Cesar Salad and PB&J rolls developed with chefs from Lettuce Entertain You, with an intent to roll out multiple units across middle America.

 

Planning was devised following intensive research on customer flow and efficiency. The order stations near the entry allow time for customers to educate themselves on the unique offerings. Payment and pick-up at the rear of the space, allow for a place to queue without disrupting diners along the perimeter. Illustrative icon-based menus, white Corian tables and shimmering white Xorel- covered padded walls extend the clean palette and create a play of neutral textures that set off a ribbon of 6 lenticular panels inset above the banquette. Simple farmhouse chairs painted bright blue enliven the space and balance the panels' cool blue and green tones, also reflected on the menu and uniform palettes. Against an ethereal background, lenticular images consisting of close cropped photographs of forms interwoven with words inspired by American diners activate the space without breaking the rigor of the composition. At the kitchen boundary, a brushed stainless steel panel rises to shoulder-height to offer a suggestion of the chef’s movements as orders are prepared while referencing the precision of cutlery blades and industrial cookware.
